the easiest shortbread cookies

Ah shortbread cookies… can anyone ever go through the holiday season without one? This recipe has been a go to for many years and one of the easiest there is. The light buttery texture makes this cookie a must have and a wonderful addition to your home during the holidays. Also, because this recipe is so easy and yeilds a fair amount of cookies, I find myself making several batches to take or send along to holiday open houses or gatherings.

INGREDIENTS
1/2 lb. butter
1/2 c. icing sugar
2 cups all purpose flour
fg* salt

*fg - few grains

INSTRUCTIONS

Set oven at 325˚

STEP 1 - Cream butter and sugar

STEP 2 - Mix in flour and salt

STEP 3 - Mix dough with hands until combined (*until your hands become greasy)

STEP 4 - Split dough into 2 parts and place in fridge for at least 1 hour. Allow to sit out at room temperature before you begin to roll.

STEP 5 - Roll cookies, cut with you favourite cookie cutter and place on baking sheet.

Bake for 10 minutes or until edges are lightly golden.
